Distillerie de Port-au-Prince is the newest rum distillery in the Caribbean, having opened in 2018 in Port-au-Prince, Haiti. The project began as a collaboration between the Barbancourt-Linge family (the descendants of the famed Barbancourt rum dynasty) and La Maison & Velier. The fruit of this partnership is a new brand of rum, Providence. The new distillery is rediscovering the methods and techniques used by the Barbancourt Distillery from 1870 to 1946.


Providence “First Drops” is the first release of the distillery. “First Drops” is an unaged rum distilled from syrup and fresh cane juice. The sugar cane comes from the incredible Cristalline variety, grown by Michel Sajous in Saint Michel de l’Attalaye. Fermentations are made separately with fresh juice and syrup which ferments for 10 to 12 days in stainless steel vats using selected yeast. Then they are distilled separately in a bain-marie batch still. The resulting spirits are combined at a ratio of 85-90% syrup distillate and 10-15% fresh juice distillate, and distilled a second time. The final distillate leaves the still at 72% ABV and is reduced to 57% ABV for bottling.


The profile is natural and fruity with an intense and enveloping nose of fresh cane, elderberry, and a light tartness. The palate is smooth and mellow, full of pineapple, strawberry, and brown sugar. The elegant finish is full of fresh cane juice, herbaceous and peppery.
